Pizza is an oven-cooked, flat, disc-shaped bread normally covered with tomato sauce and mozzarella and a variety of meats, salamis, seafood, cheeses, vegetables and herbs, which depends on one's taste and culture. Pizza has been known since Ancient Times in various kinds and garnished with nuts, raisin, herbs, honey or olives. The word pizza in Italian denotes any type of flat bread or pie - fried or made. Though there are a great many types of pizza in the Mediterranean area, it is Naples that witnessed the appearance of pizza first, after the tomato appeared on the table in the XVIII century. The first records of pizza were opened around the XI century. At first, it was called laganae, and later it was referred to as picea. Pizzas were made on the open fire and sometimes were folded in the form of a calzone. Naples was the first city where pizzerias appeared. They were equipped with brick wood-burning ovens that were heated with stones from Vesuvius. The chefs of those times neglected pizza as a dish, because it was mainly made by poor people. Still, when pizzas covered with tomato appeared at the end of the XVIII century, pizza gained popularity even among Italian royals. The popularity of pizza was reflected in the Neapolitan folklore. Easy to cook and economical, it became a favorite dish of all people. A famous episode contributed to the popularity of pizza across the borders of Naples. Italian Queen Margherita paid a visit to the city in 1889. She was told about pizza and wanted to try it. Famous cook Don Raffaele assisted by his wife was asked to cook pizza in the royal palace. They cooked three pizzas: one with basil and cheese; one with tomato, oil and garlic; and one with basil, mozzarella and tomato. The queen impressed by the colours of the third pizza (it resembled the national flag) preferred it to the other two. Since then this type of pizza has been known as Pizza Margherita. At the start of the XX century, the first pizzerias were opened in the USA due to a wave of Italian immigration, and became very popular. Still, even now the tastiest pizza is baked in Naples. |
